Turkey Smurkey - we upped our meal this year to a feast fit for royalty! Crown Pork Roast (for the first time) was a hit.
For the first time in decades, we didn't host the festivities at our home but instead, went to my nephew's new place and celebrated with him and his 3 year old little guy. His partner doesn't yet know how to cook so we agreed to bring everything with us and we'd all cook together - FUN!!
I chose to make a brined Crown Pork Roast in an oven that hadn't been used ever before, with Apple and Pecan Stuffing and the accompanying sauce was divine (if I do say so myself!) It was a mixture of onion, cranberry, balsamic vinegar and chicken stock that the roast cooked in for 1.5 hours. OMG I could have poured it in a crystal goblet and drank it quite happily!
Of course, for the special little 3 year old I was able to make him Mashed Potato Snowmen which were also a hit :)
Loads of salads, casseroles, and my brother Tim made a marvelous Venison Medallions in Cranberry which was pretty darn good too.
I guess Emo's Eating Emporium has a satellite branch, LOL
