Autumn Sweet Potato Salad with Pumpkin Butter Vinaigrette was served last week at our Canadian Thanksgiving - OMG was it good!
I had never heard of Pumpkin Butter before and I was so surprised to find it readily available.
If you love pumpkin like I love pumpkin, you're going to love this salad dressing. Please note, you can even substitute fresh pumpkin cubes for the Sweet Potato or Butternut Squash - your choice!
I was raving about how good this salad was and had several requests to share the recipe so here it is:
The secret is to get the Sweet Potato cubed and roasted in the oven, drizzled with olive oil and maple syrup with a bit of salt and pepper. (TIP: line your pan with parchment paper or tinfoil cause that syrup really BAKES on!!!) 400 degrees for 25 min, or til tender.
You can do this the day before if you like because this salad is served room temp.
Once you have your cubes roasted and cooled, you can mix this up with anything you like.
I chose:
Couple of handfuls of Arugala
Dried Cranberries
Roasted Pumpkin Seeds (or toasted pecans or walnuts) or all of them combined :)
Slivered Almonds
Diced Pears
and crumbled Goat Cheese - YUM Blue Cheese will work too.
The Vinaigrette was a work in progress with constant tasting required:
1/3 cup of Apple Cidar Vinegar
1/3 cup good Virgin Olive Oil
tsp of Dijon Mustard
2 TBSP of Pumpkin Butter (it will depend on how pumpkiny your butter is - more is always allowed)
Salt and Pepper
Whisk it all together and either drizzle over the entire salad or serve on the side.
