Here's a quick and easy answer to what's for supper on a cold wintery day . . .
RAVIOLI LASAGNA with SAUSAGE & MUSHROOMS
ready in 1 hour Just 30 min prep time and 20 minutes cook time!!
1 tsp olive oil
1 onion, diced
1 minced garlic cloves
1 pount of Hot Italian Sausage, removed from casing
1 large can of crushed tomatoes
1 tsp oregano leaves
1/2 cup of heavy cream (35%)
1/2 cup milk
1/2 pound of sliced mushrooms
1 1/2 pounds (large package) of fresh ravioli, preferably spinach and mushroom
1 cup grated mozzarella cheese
Preheat oven to 350 degrees
Heat a large pot over medium heat Add oil then garlic and onions. Cook until onion is soft, about 3 minutes. Add sausage meat. Mash with a fork, stirring often to keep mean crumbly. Cook until no longer pink.
Add tomatoes and oregano. Season with fresh pepper and then stir in cream and milk. Set aside 1 cup of sauce. Add mushrooms and ravioli to pot. Stir to coat and then pour into a lasagna dish pressing dow to even out the ravioli. Pour reserved sauce overtop and then sprinkle with the cheese.
Bake in centre of oven, uncovered until Ravioli are cooked hrough and cheese is melted, about 20 minutes. I like to let mine rest about 10 minutes before serving with a nice and crisp green salad on the side
